WINEMAKING PROCESS

In white, with separation of the must from the skins with soft pressing. Fermentation at controlled temperature. Sparkling process terminated throughout scheduled and selected yeasts stirring.

FOOD PAIRINGS

Perfect paired with happy hour snacks (venetian “cicchetti”), salty starters and main courses; it is perfect while eating sea food dishes. Best served as aperitif.

The Glera is wide spreaded in Friuli; it indeed looks like its origin is from a village near Trieste, called Prosecco. As mentioned, Glera is a vine and therefore can be cultivated around the world. However, the wine you can obtain from it would be far less appreciated compared to the one obtained from cultivations in Friuli or Veneto, where his history looks back more than 300 years.

It is therefore very antique, even more than the Romans empire, as professor Dalmasso tells. From hills to lowland, this is a sparkling wine with notes of fresh green apple, nuts and hints of white blossom. Colour is golden yellow with some green notes. Its perlage is very elegant and persistent. Overall, it reflects the prettiness of its unique territories, where it plays a very important role in the economy and social life.

Prosecco has to be produced with minimum 85% of Glera and maximum 15% of other vines like Chardonnay, Verdiso, Pinot or Perera.
